Ingredients – Chilli, cumin, coriander, paprika, onion powder, garlic powder, herbs, spices, seasalt and NO nasties
Recipe Idea – Mexican Meatballs in Tomato Sauce
500g minced meat, 1 onion diced, 1 egg, 1 tbs spice mix, 2 capsicums, 1/2 cup cooked rice, 420g can tomato soup, 1 cup water
In a large bowl, mix the meat, egg, rice, spice and onions together until combined. Core the two capsicums and stuff the cavity with the meat mixture. Pour the can of tomato soup into a large pot with 1 cup of water. Add the stuffed capsicums and make mini meatballs from any left over meat mixture. Simmer gently for 45 minutes and serve with mashed potatoes or crusty toasted bread.
