Recipe Idea – Chicken Laksa with Hokkien Noodles
2 chicken breast fillets diced, 1 onion peeled and sliced, 2 cups water, 1 tablespoon spice mix, 400ml coconut milk, 200g hokkien noodles, 100g bean shoots, 2 carrots peeled and thinly sliced, small box choy cut into quarters, broccoli
Brown Chicken in wok with a little oil, add onions, spice, vegetables, water, coconut milk and simmer for 10 minutes. add some optional fresh chilli for some heat. Cook noodles to packet direction and service with Curry Laksa. sprinkle with optional fresh chopped coriander
