Recipe Idea – Mango Chicken with Coconut Sauce
2 chicken fillets diced , 1 can mango pieces, 1 tablespoon spice mix, 1 tin coconut milk or cream, 2 chopped spring onions. In a large frying pan, sauté the meat on both sides until cooked and golden, add the spice mix, mango pieces, coconut cream, spring onions and simmer for a few minutes. Serve with asian greens or steamed rice.

quick and easy – stirfry a selection of vegetables, chickpeas, mango pieces, add 1 tablespoon of spice blend and a can of coconut cream. Serve with steamed rice.
