Italian Classic suitable for Casseroles and Slow Cookers
Ingredients – paprika, cumin, coriander, garlic powder, onion powder, oregano, black pepper, dried mushrooms, parsley, herbs, spices, salt, sugar and NO nasties
Recipe Idea – Whole Chicken pieces, cut, 2 onions diced, 250g sliced mushrooms, 100g black pitted olives, large can crushed tomatoes, 150ml water, 1 tablespoon spice mix
Brown onion in a little olive oil in a large pot, add chicken pieces and brown for 5 minutes, add spices, crushed tomato, mushrooms, water and simmer for 30 minutes with lid on. Add black olives and cook further 10 minutes. Serve with rice, pasta or potatoes.
Vegan option – omit chicken and add chunky vegetables like broccoli, cauliflower, sweet potatoes, pumpkin, eggplant, zuchinni
